These come straight from the sides we process right here in our production shop, so stock is limited and ever-changing. Sometimes you’ll get a shoulder, sometimes a butt. You're welcome to leave a note with your preference, but we can’t guarantee specific cuts every time. (Hey, it's part of the adventure.)
